Ginger Turmeric Cookies

It may sound like an unlikely ingredient for a cookie, but the turmeric in this recipe is really a subtle flavor bystander to the more feisty presence of the ginger. The turmeric does however, standout in the rich golden outer color of this cookie, and the surprisingly vibrant orange-hued center.


This is a super simple, easy to pull together recipe, with just 7 ingredients that you probably have on hand. Have an unexpected friend dropping by for tea? You can whip this together in the time it takes for the water to boil and the tea to steep. The yumminess of this treat comes from the fresh grated ginger offset by the maple syrup. It's a lovely balance between the spicy ginger and sweet syrup. Its a crowd-pleaser across all ages - my kids love it!

 

Ingredients:

  • 3 cups fine almond flour

  • 1 tsp ground turmeric

  • 1/2 tsp baking soda

  • pinch of salt

  • 1/4 cup coconut oil, melted

  • 4 tablespoons maple syrup

  • 2 tablespoons fresh, grated ginger

  • 1 tsp vanilla


Method:

Preheat your oven to 350F. Mix together the dry ingredients in a bowl.

Make a well in the center of the dry ingredients and add in your wet ingredients. Mix well until combined into a dough. Drop small rounded balls of dough onto a cookie sheet lined with parchment. I use a 1-tablespoon measuring spoon to measure out my cookie dough.


Bake for 10-12 minutes until bottoms are slightly browned. Allow to cool for a few minutes before removing from the pan. The cookie holds together better once cooled.
